Valerie's Cheesecake Recipe
Base ingredients
1 1/2 packet semi-sweet biscuit (crushed)
1/3 cup icing sugar
1/2 cup melted butter
Base Directions
Stir butter into icing sugar and crushed biscuits.
Press into greased cheesecake pan.
Put in fridge for one hour.
Cheesecake Mixture Ingredients
250g packet of cream cheese
tin of condensed milk (435 ml)
2/3 tin of evaporated milk, nearly frozen.
1/3 cup lemon juice
3 drops vanilla
other 1/3 cup icing sugar
Cheesecake Mixture Directions
Put evaporated milk in freezer several hours before preparing cheesecake mixture.
Beat together philly cream cheese, lemon juice, vanilla and condensed milk.
Set mixture aside.
Final Preparation
In separate and large bowl, using clean dry beaters, whip nearly frozen evaporated milk until thick, fluffy and creamy.
Beat in 1/3 cup icing sugar, gently fold cream cheese mixture into evaporated milk mixture.
Pile into waiting biscuit base in cheesecake pan.
Set in fridge for several hours.
Decorate top as desired. Plain is delicious, or try chocolate chips, passion fruit, raspberries, strawberries, grated chocolate etc. as you desire.
Preparation time: 30 minutes, if evaporated milk is pre frozen.
Serves: 8 to 12 depending on serving size.
